1. Artisan Production: Oversee and execute the daily scratch-production of premium sourdough bread, viennoiserie, and signature bakery items.

2. Dough Mastery: Independently manage sourdough fermentation, precise lamination techniques, shaping, proofing, and baking schedules.

3. Quality Control: Maintain strict consistency, product presentation, and flavor profile standards across all batches.

4. Operational Planning: Organize daily mise en place and lead structural production planning to ensure seamless mornings.

5. Team Leadership: Train, guide, and mentor junior bakers and kitchen team members to build a disciplined, cohesive kitchen culture.

6. Kitchen Inventory: Monitor ingredient usage, manage stock levels, handle supplier rotation, and actively minimize wastage.

7. Hygiene & Compliance: Maintain a spotless workstation and enforce local food safety and cleanliness standards at all times.

8. R&D Support: Collaborate with the Head Chef on creative product development and seasonal menu rollouts.
