Furthermore, research published in FEMS Yeast Research discovered that modern lager brewing uses a yeast strain that originated in the year 1602. This yeast was created by mixing strains from both pale and dark beer mashes and had been used in Franconia and Bavaria as early as the 14th century. Max Rees, a scientist and professor, later named it Saccharomyces Pastorianus in honor of the French chemist Louis Pasteur.
